Great recipe - One thing we have learnt though is NEVER use a fork to turn steak - it pierces the flesh - you should ALWAYS use tongs. Great presentation.

I'm going to try the sauce but with blue cheese since my grocery store doesn't carry the other stuff. I made a similar sauce in the past and put the ingredients right in the pan after cooking the steaks, mixing all the flavors until the cheese and olive oil blended together. I chopped up the steaks and put them over garden salad with fresh tomatoes, then drizzled with the sauce.It was much better than eating the steak and salad separately!

GOOD stainless pans are usually oven proof. Some are not so read instructions! As Macy's Culinary Professional, I work with a huge amount of different cookware and have found that, yes, most good quality stainless steel pans are ovenproof. Again, check instructions - sometimes the base pan is ovenproof but the lid is not. You mentioned the words "grade, brand, thickness, composition". All these play a part in whether the pan is oven (and broiler) proof and to what degree. ~Rita

Why would a good stainless steel pan not be oven proof.What determines an oven proof stainless steal pan with a stainless steal handle? Is it grade, brand, thickness or composition?

I went to the local supermarket (Publix) and picked up a pound of shrimp, some sparkling red grape juice, chocolate pudding mix, cool whip, and made a candle-lit dinner for my baby.
