I'm not really up on your first question, except to say "yes". As far as your alcohol content goes, you use a hydrometer before you add your yeast. Mine has a scale on it that tells me the "potential" alcohol based on a specific gravity reading which depends on how much sugar is in the solution. The more sugar, the less the hydrometer will sink when you put it in. You take a reading right where the surface of the wart touches your hydrometer.

hey craig great videos! two quick questions...is it possible to add your own flavors to the mix such as chocolate, coffee, vanilla etc. How would you go about doing this?? Also is there a way to tell the alcohol content in the beer?

and one thing i've not seen anyone mention is make sure that you get a stainless steel brewpot - NOT and aluminum one - i'd hate for the views to start going blind

Hi again. Do you use kits only (like me) and if so are you liberal with the amount of fermentables you use resulting in the higher OG of your beers? Because of the higher gravity of my current brew would it be better to wait and see if if it drops more before bottling?Thanks.

Beer flavoured wine? My homebrew's OG occasionally gets that high or higher, and there are plenty of microbrews at that level. As long as the beer is balanced with bitterness and a slightly higher FG, it should be good albeit strong. If its a bit harsh, let it age for about 4-6 months.
